Take the subway at least once. Spend some time in parks to people-watch (Washington Square and Central Park are good places to start). The Metropolitan Museum of Art has something for everyone, Natural History Museum across the park is also great, MoMA for more specialized tastes, tons of smaller museums, too. Broadway shows let you know you are in the big city. I like to do touristy stuff like go up the Empire State building to get a view of the whole area...
Eat. A lot. Of different stuff. I can recommend places, so can a lot of people, but it's really a great-eating town.
Don't know your budget, or if you have kids with you, but of course you can blow it out at a really fancy hotel...or stay in a Comfort Inn and probably be just as happy. We rented an apartment last year through an online service, not cheap but nice to have some room to spread out.

$250 a night seems expensive but I guess is around the norm....agree?
It has been 15 years since we have been there. I am told much has changed and that it is a much safer place than then. thoughts?

$250 is for a decent place...you can spend a lot more and still not get much. let me know if i can help on location or specifics, including restaurants. email might work best for all that.
yes, it's cleaner, safer place than it used to be.
Eat at Le Bernadin or Masa. Per Se, WD-50, Craft, Babbo, Jean Georges, Daniel, Alain Ducasse, Bouley, Danube and Aquavit are also acceptable.
Hotel Gansevoort and The Mercer are great hotels in cool neighborhoods. St. Regis is where I usually stay.
The billionaire nightclub Door is closed. Sorry.
